Winter Warmers - Delicious Recipes & Eco Friendly Soup Packaging

Hello winter! It’s a cold one today, and it goes without saying that winter staples include hot chocolate and soup. Snuggle up to a fire, or wrap up in a blanket, and enjoy one of these delicious vegan recipes that are just made for a chilly winter’s evening.

 

Vegan Hot Chocolate

A creamy homemade vegan hot chocolate recipe that's the perfect way to warm up.

Ingredients (for 1 serving):

160ml milk of choice (almond, coconut, oat, or even plain dairy works for a non-vegan option)

80ml coconut milk (or additional milk of choice)

2 - 3 tbsp cocoa powder

1-2 tbsp sweetener of choice, as desired

Pinch of salt

1/2 tsp pure vanilla extract

For extra deliciousness, try these easy optional flavours: add in a dash of peppermint extract; 1 tsp of instant coffee, or 1 – 2 tsp of peanut butter.

Instructions:

Whisk all ingredients in a pan on the stovetop, or in a mug in the microwave for 30 second intervals.  Stir well until hot and the cocoa has dissolved. Lastly, add in the vanilla, and whisk to finish. Serve and enjoy!

Vegan Tomato Soup

This easy vegan tomato soup is the perfect appetizer. It’s ready in 30 minutes!

Ingredients: (makes 4 servings)

1 tbsp olive oil

1 small red onion, diced

800g (roughly 2 cans) of whole peeled tomatoes

240ml water

1 tsp dried oregano

1 tsp dried basil

1 tsp smoked paprika (regular sweet paprika works, too)

kosher salt to taste

80ml light coconut milk

Instructions:

Heat olive oil in a heavy-bottomed pot, over medium-low heat. When the pot is hot, add onions and cook for 6 to 8 minutes, until the onions are soft. Stir often to keep the onions from burning.

Add the entire can of whole tomatoes, including the liquid, and 1 cup of water. Using the back of a wooden spoon, gently smash the tomatoes. Add dried oregano, dried basil, paprika, and a pinch of kosher salt. Raise the heat to medium and bring everything to boil. Let soup simmer for 8 to 10 minutes. Turn off heat. Let the soup cool off for 5 minutes before transferring to a blender to blend.

Return soup to pot and stir in coconut milk.

Serve in bowls with black pepper, basil leaves, and cashew cream, if you like.
